Tasty Baked Oatmeal

Another morning, another tasty oatmeal dish.

I had a bunch of frozen organic mixed berries and have been wanting to use them up in something other than smoothies so I decided to make some baked oatmeal this morning.

I tossed together some ingredients, popped it in the oven and out came this tasty bubbly pan of oatmeal.

If you make this and it isn’t quite right please forgive me I was just kind of tossing things around so I may have used slightly more or less of each ingredient.

Also the Chia & Flax are totally optional but I love the crunchiness they give to the oatmeal. 😀

Baked Berry Oatmeal

3 T butter (melted)

2 cups old-fashioned rolled oats

1/3 cup of almond meal (left over from making almond flour)

1/8 cup truvia

1 t baking powder

1 1/2 t ground cinnamon

1/2 t salt

1 T chia seeds

1 T flax seeds

2 cups milk

1 large egg

2 t vanilla

2 bananas (sliced thinly, this is a great time to use those really brown bananas)

1 10 oz bag frozen mixed berries

1. Preheat oven to 375.

2. Mix all dry ingredients in one bowl.

3. Mix all wet ingredients in a seperate bowl (don’t forget the butter that you melted in the microwave)

4. Line the bottom of your baking dish with your sliced bananas then pour a little over half the bag of berries on the bananas.

5. Pour dry mix in to the pan and and disperse it evenly

6. Pour the wet mix on top of the dry mix and make sure it soaks through.

7. Pour the last bit of berries along the top of the oatmeal mixture.

8. Bake for 35 minutes.

9. We drizzled honey on top of our oatmeal and it was very tasty.

Quick Pick me ups

As moms we are always trying to fit in as much into our day as we can. Between cooking, cleaning, caring for kids, working and everything else we do sometimes taking care of ourselves falls to the wayside.

I know that I usually go and go and go and then eventually I crash. Why does this happen to me everyday? Because I forget to make sure I am fueling my body for all that I am asking it to do. Sometimes as a quick pick me up I will turn to protein shakes or bars to give me that little boost to keep me going. Sadly a lot of protein bars are full of processed garbage that can really do more harm than good and shakes can be time consuming to make (not to mention it creates more dishes for you to wash). So for me the challenge was to find something that still gives me that energy charge without the gross ingredients I can’t pronounce or the mess.

I have come up with a wonderful solution and they only take a few minutes to make and makes enough to last you at least a week.

What I absolutely adore about my homemade protein bars is that I can customize them to my taste.

The ingredients can be as simple or as numerous as i want.

But the best thing is they don’t taste like a piece of cocoa powdered cardboard.

Chocolate Oatmeal Protein Bars

1 Mashed Banana

1.5 c. Dry Oatmeal

2 T flax meal

4 scoops protein powder (I used chocolate for this one)

1/4 of your favorite nut butter ( I used my homemade peanut butter)

1/4 c. shredded coconut

1/4 c. chopped almonds

1/4 c. melted coconut oil

1/4 c. water

Mix all of the ingredients together in a bowl.

Spread contents evenly onto a wax paper covered cookie sheet.

Freeze for at least 3 hours.

Cut into individual bars.

Stack into a tupperware container and store in the freezer.

You can customize these to your taste.

Make them with Vanilla powder instead and add in some dried fruit.

When you are ready to snack just head over to your freezer pull one of these out and enjoy.

If you would like you can let it sit and thaw slightly before eating it.

Prep Day {Cilantro Lime Chicken&Lemon Pepper Chicken}

Nothing is more important to staying on track with a healthy lifestyle than preparation.

If you get hungry in the middle of the day and want something quick to eat you are not going to want to spend the time chopping chicken, cooking chicken, cooking rice, steaming veggies, ect. To make things easier on you and to help keep you on track it is best to spend a few hours one day a week getting all your food in order.

Last night I prepped breakfasts and lunches to last the next 5 days. I cooked down 2 bags of rice (half in the fridge and the other half frozen for next week), a large bag of oatmeal (my kids live almost exclusively on oatmeal and fruit at the moment because they don’t want to eat anything else), chicken cooked 3 ways (seasoned with salt and pepper, lemon pepper, and cilantro lime), and steamed some broccoli and cauliflower.

Having all of this ready makes life so simple. In the morning when I want oatmeal I just heat it back up and add whatever I want to flavor (fruit, pumpkin puree, cinnamon or nuts). At lunch when I am hungry I just pick what I want and heat it up! SIMPLE. Simple is the key word to keeping you going and not getting frustrated or giving into temptations. So this weekend I challenge you to plan a prep day. Try to do it before Sunday and make enough to last you the week. You will be amazed at how much easier things are when you aren’t constantly stressing over what to eat your next meal or how to prepare it.
